Raspberry Pistachio Panna Cotta

Serves: 6
Time: 20 minutes prep / 4 hours chill
Ingredients:
- 300ml almond cream
- 300ml almond milk
- 3g agar-agar
- 60g brown sugar
- 3g vanilla (powder or extract)
- 400g raspberries / wild raspberries / brambles
- Crushed pistachios
Instructions:
Top with raspberry compote and pistachios before serving.
Cook raspberries with 20g sugar, 1g vanilla, and 1g agar-agar. Simmer 5 min. Cool.
Heat cream and milk with 40g sugar, 2g vanilla, crushed pistachios. Boil.
Add 2g agar-agar, boil 1 min. Pour into cups. Cool 30 min, chill 3 hrs.
