Raspberry Pistachio Panna Cotta

Serves: 6

Time: 20 minutes prep / 4 hours chill

Ingredients:

  • 300ml almond cream
  • 300ml almond milk
  • 3g agar-agar
  • 60g brown sugar
  • 3g vanilla (powder or extract)
  • 400g raspberries / wild raspberries / brambles
  • Crushed pistachios

Instructions:

Top with raspberry compote and pistachios before serving.
Cook raspberries with 20g sugar, 1g vanilla, and 1g agar-agar. Simmer 5 min. Cool.
Heat cream and milk with 40g sugar, 2g vanilla, crushed pistachios. Boil.
Add 2g agar-agar, boil 1 min. Pour into cups. Cool 30 min, chill 3 hrs.
