Cantonese Rice

Serves: 4
Time: 30 minutes
- Ingredients:
- 200g smoked tofu
- 4 tbsp soy sauce
- 1 tsp maple/agave syrup
- 150g peas
- 150g rice
- 2 carrots
- 1 onion
- 100g silken tofu or 100ml soy cream
- 50g chickpea flour
- 100ml water
- 1 tbsp oil
- 1 tbsp cornstarch
Instructions:
- Cook the rice.
- Blend omelet ingredients. Cook in oiled pan, covered, until set. Flip and finish cooking. Set aside.
- Cut tofu into matchsticks. Fry in pan with oil, 2 tbsp soy sauce, and syrup until golden.
- Sauté carrots and onion in oiled wok.
- Add rice, chopped omelet, tofu, and peas. Once rice is lightly fried, add 2 tbsp soy sauce.
