Chili Sin Carne

Serves: 4

Time: 15 minutes prep / 30 minutes cook

Ingredients:

  • 1 onion
  • 2 garlic cloves
  • 2 carrots
  • 600g red beans
  • 200g corn
  • 400g canned tomatoes
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp sweet chili
  • 200g rice
  • Fresh cilantro
  • Optional: Tabasco

Instructions:

Cook rice. Serve chili with rice and cilantro.
Soak/cook beans if using dried. Chop and sauté onion, garlic, and carrots.
Add beans and spices. Then tomatoes and corn. Simmer 30 minutes.
