Red Lentil Dahl

Serves: 4
Time: 20 minutes prep / 20 minutes cook
Ingredients:
- 400g canned tomatoes
- 400ml coconut milk
- 300g red lentils
- 2 carrots
- 2 onions
- 2 zucchinis
- 1 garlic clove
- Fresh ginger
- 1 bouillon cube
- Spices: turmeric, cumin, coriander, pepper
- Optional: spinach or kale
Instructions:
Optional: add greens at the end. Serve with rice or grains.
Chop and sauté veggies. Add garlic, ginger, and spices.
Add tomatoes, coconut milk, bouillon, and lentils. Simmer 25 minutes.
