Thai Chickpeas

Serves: 2
Time: 20 minutes prep / 1 hour if using dry chickpeas
- Ingredients:
- 250g chickpeas
- 150ml coconut milk
- 1 red onion
- 1 garlic clove
- Fresh ginger
- 2 tbsp soy sauce
- 2 tbsp peanut butter
- 1 tbsp agave syrup
- Optional: Fresh cilantro, scallions, whole peanuts
Instructions:
- If using dry chickpeas: soak overnight, cook 1 hour.
- Sauté chopped onion, garlic, and ginger.
- Add chickpeas and curry powder. Sauté 1 min.
- Add soy sauce, peanut butter, and syrup. Mix well.
- Pour in coconut milk. Simmer 10 min. Thin with water if desired.
- Serve with rice and toppings.
