Thai Chickpeas

Serves: 2

Time: 20 minutes prep / 1 hour if using dry chickpeas

  • Ingredients:
  • 250g chickpeas
  • 150ml coconut milk
  • 1 red onion
  • 1 garlic clove
  • Fresh ginger
  • 2 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp agave syrup
  • Optional: Fresh cilantro, scallions, whole peanuts

Instructions:

  1. If using dry chickpeas: soak overnight, cook 1 hour.
  2. Sauté chopped onion, garlic, and ginger.
  3. Add chickpeas and curry powder. Sauté 1 min.
  4. Add soy sauce, peanut butter, and syrup. Mix well.
  5. Pour in coconut milk. Simmer 10 min. Thin with water if desired.
  6. Serve with rice and toppings.
