Winter Vegetable Couscous

Serves: 4

Time: 15 minutes prep / 35 minutes cook

Ingredients:

  • 250g semolina
  • 2 turnips
  • 2 leeks
  • 4 carrots
  • 2 onions
  • 1 bouillon cube
  • 150g chickpeas
  • 1 tbsp ras-el-hanout
  • 1 tbsp cumin
  • 1 tbsp ground coriander
  • 1 tsp cinnamon
  • Optional: raisins, veggie sausages

Instructions:

Optional: fry veggie sausages. Prepare semolina and serve with stew.

Soak/cook chickpeas if using dried. Cut all vegetables. Sauté onions, then add rest and spices.

Add bouillon and 400ml water. Simmer 30–40 minutes. Add chickpeas and raisins.
