Creamy Wild Mushroom Risotto

A rich and earthy risotto with mixed wild mushrooms.
Ingredients
– 2 cups mixed wild mushrooms – 1 cup Arborio rice – 4 cups vegetable or chicken broth – 1/2 cup white wine – 1/2 cup grated Parmesan cheese – 2 tbsp olive oil – 1 small onion, finely chopped – 2 cloves garlic, minced – Fresh thyme leaves – Salt and pepper to taste
Method
1. Sauté onion and garlic. 2. Add rice, cook, and add white wine. 3. Add hot broth gradually, stirring. 4. Sauté wild mushrooms separately. 5. Combine mushrooms with risotto. 6. Stir in Parmesan cheese and season.
